Simply Rice with a twist

Hey Everyone. Thanks for stopping by. Today I just wanted to share something that is so basic but done almost everyday -  How to cook Rice . In our home, we use Basmati Rice - just because it's tasty, light, and quick to prepare. There are a few ways in which rice can be cooked - Boil, Steam, Absorption. In India, traditionally rice is cooked using the boiling method. But I  follow the absorption method  because it's easy to cook Basmati rice using this method. For other types of rice I find it's best to follow the boiling method. I will explain both methods in the procedure. These days we can even make use of a rice cooker or a microwave to cook rice. Sweet Potato Stir Fry (Mezhukkupuratti)

In Kerala, these stir fry dishes would be called Mezhukkupuratti . They are quick to make and are absolutely delicious. They go well with both rice and chapatti - a perfect side dish. And you can make mezhukkupuratti  with almost every vegetable :) So What Do We Need ? 1 big sweet potato. Clean it well and remove the skin completely. Then cut it into small thin rectangular pieces - almost like those thin French fries/ chips - just not as long - maybe half the length. Try to cut each piece out as evenly as possible. Also do  immerse the cut pieces in a bowl of water with around 1 tsp salt dissolved in it. Keep them in water till you are ready to cook them. This helps in preventing any discoloration of the pieces you have cut. 1 big onion or about 6-8 small onions/ shallots.   Cut into thin slices. Shallots give more flavor than the big onion.
