What is Laura's FOOD fantasies all about

Hey Everyone!! Thank you so much for stopping by.  To tell you why I started this blog, I must first tell you a bit about me. All my life I have enjoyed the luxury of having my mom cook and feed me her amazing food. Never have I ever stepped into the kitchen even to take a glass of water for myself. Yup, I'm really embarrassed to admit it but it's the truth. And while I made no effort to help my mom out in the kitchen, my mom too decided to let me stay a baby even when I got into my twenties. Then one fine day I met the man with whom I could see my future with - George. We decided to get married and it all felt like a wonderful dream. And yes, you might have guessed it. It was the kitchen that brought me back to reality. For the first time I regretted not knowing how to cook. George was very supportive though. He knew a fair bit of cooking himself. He tackled the Non-veg dishes while I with his love and encouragement tried my hand at vegetarian recipes. I replaced my fear with curiosity and eagerness. Yup, you could say I was becoming a food scientist. I dealt each dish I made like an experiment - observing the outcome and with honest feedback from George, I kept tweaking. I recreated dishes that my mom would make often at home recollecting how it looked and tasted.  It's now been 4 years and I have learnt so much and I am getting better and better at cooking . I have even taken on Non-veg dishes in my kitchen. Yay! :)  And there is nothing better than when George takes a 2nd round of what I have cooked.  Sometimes a 3rd too :) It makes me so happy and proud. And I just love cooking. I am at my happy place when I'm in my kitchen making a dish. I am not a Master chef. I'm still learning and trying out new recipes.

So, with this blog I hope to help people who are in the same situation I was 4 years ago and help overcome their kitchen phobia and enjoy their time in the kitchen no matter what the end result of the dish is. Just want to make recipes seem less daunting, share tips that I have learnt over time and probably try out new recipes and share the experience of making it and how it turned out.

I am a South Indian living abroad and although I have more to share on the dishes from Kerala, I wont be  restricting myself to just that.

Hope you like  Laura's FOOD fantasies .  All the best people . Enjoy : )

Chicken Istoo (Stew)

Chicken Istoo Hi All. Today's recipe is an all time favorite of mine. It's enjoyed so much by Malayalees and is a popular breakfast dish in Christian households. It's even a default, must- have dish served at Christian wedding receptions - your meal is going to start off with a serving of Istoo and Appam. It's just delicious. Istoo is a coconut based white gravy dish and it's amazing how a few ingredients can just create something so yummy. It isn't a spicy dish and so it's definitely something that can be enjoyed by anyone and everyone - young and old alike. So What Do We Need? About 1 kg Chicken - including bone pieces  - Cut into small to medium size pieces Clean the chicken well. Remove the skin off the pieces and give the pieces a good wash. Then in a bowl, take the washed chicken pieces and add a tablespoon of vinegar and a dash of salt. And fill the bowl with water. Let the chicken pieces sit in this vinegar water for 10 - 15 m...

Sweet Potato Stir Fry (Mezhukkupuratti)

In Kerala, these stir fry dishes would be called Mezhukkupuratti . They are quick to make and are absolutely delicious. They go well with both rice and chapatti - a perfect side dish. And you can make mezhukkupuratti  with almost every vegetable :) So What Do We Need ? 1 big sweet potato. Clean it well and remove the skin completely. Then cut it into small thin rectangular pieces - almost like those thin French fries/ chips - just not as long - maybe half the length. Try to cut each piece out as evenly as possible. Also do  immerse the cut pieces in a bowl of water with around 1 tsp salt dissolved in it. Keep them in water till you are ready to cook them. This helps in preventing any discoloration of the pieces you have cut. 1 big onion or about 6-8 small onions/ shallots.   Cut into thin slices. Shallots give more flavor than the big onion. However use whichever you have availabl...
