Easy - Peasy salad

 

I made this salad today and I just had to share it with you all.
 
I call it the 'Easy - Peasy' salad. Without more ado - let's get to it.

So What Do We Need?
  • 2 tablespoon Yoghurt
  • 1/2 teaspoon Lime / Lemon juice (Optional)
If the yoghurt is tasting more tangy and sour then skip the lime/ lemon Juice.
  • 1 teaspoon Soy sauce
  • 1 tablespoon Olive oil
  • 1/2 - 1 teaspoon crushed Pepper - Adjust as per taste and preference.
  • 1/2 teaspoon smoked Paprika powder
  • 5 to 6 Lettuce leaves - Torn to bite size pieces.
  • 1 Tomato - Sliced or chopped to bite size pieces - whichever way you prefer.
  • 1 Cucumber - Sliced - You can peel away the skin if you want to.
  • 6 pitted Olives Black or Green - sliced
  • 3-4 Mint leaves - chopped
  • 1 sprig Coriander leaves - chopped
  • Cooked Chicken / Fish / Hard boiled Egg - cut into bite size pieces.
  • Salt if required

Let's Do This

  1. In a big bowl, whisk together yoghurt, olive oil, soy sauce, lime juice, pepper and paprika.
  2. Taste to check if salt needs to be added. If so, add enough salt and mix well.
  3. Toss in the lettuce, tomato, cucumber, olives, mint, coriander leaves.  Mix well.
  4. Now add the pieces of chicken / fish / egg.
  5. Serve it on a plate and just sprinkle some paprika powder over the top.
  6. And your done.
Hope you enjoy this quick and easily done Salad. It has everything you need and is very filling. Like always you can add in whichever veggie that you like and tweak the recipe to suit your taste. Do give it a try. And stay happy and healthy.


Note

Have this salad as soon as you are done making it. The longer you keep it in the bowl or in the fridge - the juices from the tomato and cucumber are going to get released. So you will have this wet watery mixture left at the bottom of the bowl which just makes everything very soggy.

Sweet Potato Stir Fry (Mezhukkupuratti)

In Kerala, these stir fry dishes would be called Mezhukkupuratti . They are quick to make and are absolutely delicious. They go well with both rice and chapatti - a perfect side dish. And you can make mezhukkupuratti  with almost every vegetable :) So What Do We Need ? 1 big sweet potato. Clean it well and remove the skin completely. Then cut it into small thin rectangular pieces - almost like those thin French fries/ chips - just not as long - maybe half the length. Try to cut each piece out as evenly as possible. Also do  immerse the cut pieces in a bowl of water with around 1 tsp salt dissolved in it. Keep them in water till you are ready to cook them. Mung Bean Coconut Stir fry - Cherupayar Thoran

Hi there. Today's recipe is an absolute favorite dish of mine - Cherupayar Thoran Who knew these small green beans could be so tasty without having to meddle with it a whole lot. Simple ingredients just elevate the flavor and result in an amazing dish. Its a prefect accompaniment to Kanji (Rice Porridge).  And I personally enjoy having cherupayar thoran with just rice and a little chammanthi (chutney). Yummy!   Now just fyi, both thoran and mezhukkupuratti recipes are stir fry side dishes. But the main difference between them is that in thoran will have grated coconut in it - mezhukkupuratti wont.
