Quirky Spinach Capsicum Stir Fry

Hey there. Here's the first of my spinach stir fry recipes. The recipe I'm posting today is an easy, yummy and quick one to make. It's the perfect side dish and a simple way to get some greens into your system :-)

So What Do We Need?
  • 1 big bunch of Spinach 
Cut away the roots and remove any dirty or damaged leaves. Then rinse the spinach thoroughly under running water. They will have a lot of dirt and grit. So rinse it out over and over to clean it thoroughly. Then let it dry. 
Finely chop the spinach - stem and leaves.
  • 1 Capsicum - chopped 
  • 1 medium Onion - finely chopped
  • 1 or 2 Green Chilli - depending on your spice preference - finely chopped
  • 4 Garlic cloves  - finely chopped
  • 1 small piece of Ginger - finely chopped
  • 1/4 teaspoon Turmeric powder
  • 1/2 teaspoon Chilli powder 
  • A pinch of clove powder
  • 1 tablespoon Soy sauce
  • 1 tablespoon Vegetable Oil
  • 1 teaspoon crushed Pepper
  • Salt as required
Let's Do This
  1. In a pan over a low to medium flame, heat oil and add the chopped onion. Fry it till it is golden brown.
  2. Add the chopped garlic, ginger and green chilli. Fry it till the raw fragrances of the ginger and garlic are gone completely. Stir continuously.
  3. Add the chopped capsicum. Cook it till the capsicum turns soft. Keep stirring.
  4. Add the spice powders. And cook it till the spices are nicely roasted.
  5. Then add the soy sauce and crushed pepper. Stir well. And toss in the chopped spinach. Mix well.
  6. The spinach will begin to wilt giving out moisture and the quantity noticeably reduces. Cook till the moisture is gone stirring continuously - around 2 to 3 minutes. 
  7. Then taste and check if more salt or pepper is needed and add accordingly.
  8. And you are done :-)

Sweet Potato Stir Fry (Mezhukkupuratti)

In Kerala, these stir fry dishes would be called Mezhukkupuratti . They are quick to make and are absolutely delicious. They go well with both rice and chapatti - a perfect side dish. And you can make mezhukkupuratti  with almost every vegetable :) So What Do We Need ? 1 big sweet potato. Clean it well and remove the skin completely. Then cut it into small thin rectangular pieces - almost like those thin French fries/ chips - just not as long - maybe half the length. Try to cut each piece out as evenly as possible. Also do  immerse the cut pieces in a bowl of water with around 1 tsp salt dissolved in it. Keep them in water till you are ready to cook them.
