Eggy Spinach

Here comes my second recipe in the Spinach series - the 'Eggy Spinach'. Quite obvious from the name it's a spinach and egg dish. Simply put - its Nutritious and Yummy.

So What Do We Need?

  • 1 big bunch of Spinach
Cut away the roots and remove any dirty or damaged leaves. Then rinse the spinach thoroughly under running water. They will have a lot of dirt and grit. So rinse it out over and over to clean it thoroughly. Then let it dry. 
Finely chop the spinach - stem and leaves
  • 1 to 2 Eggs
Add more eggs if you would like to have it more 'eggy'. But when I prepare this dish I aim to have more spinach than egg in ratio. I just try to have the egg evenly spread throughout the dish.
  • 1 medium Onion / 3 to 4 Shallots - Finely chopped
  • 1 or 2 Green chillies - Based on your level of tolerance - Finely chopped
  • 3 or 4 cloves of Garlic -  Thin julienne slices
  • 1/2 tablespoon crushed Pepper
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1/4 teaspoon crushed Red Chilli Flakes
  • 1.5 tablespoon Soy sauce
  • Salt if required
  • 1 tablespoon vegetable Oil

Let's Do This

  1. In a pan - over a low to medium flame, heat some oil.
  2. Then add the chopped onion or shallot and a pinch of salt. Cook this till it becomes translucent - semi transparent. Stir well.
  3. Add in the chopped garlic and green chillies and cook this till the raw fragrance of the garlic is completely gone. Stir well to prevent it from burning.
  4. Stir in the crushed red chilli flakes.
  5. Now add the spices - turmeric and coriander powders. Stir continuously. Cook till the raw fragrances of the spices are gone completely. Add a bit more oil, if it seems too dry after adding the spice powders.
  6. Now add the chopped spinach and soy sauce. Stir well. Reduce the flame to low.
  7. When the spinach begins to wilt and release moisture - add the eggs. Stir well to break the egg and to coat the spinach evenly with the egg.
  8. Stir continuously so as to ensure the eggs get cooked without forming large clumps. We need the egg to be as fine as possible - almost as fine as powder and spread evenly through out the spinach .
  9. If you feel the egg is taking longer to cook then you may increase the flame - but keep stirring continuously. By doing so - you also make sure that the egg doesn't stick to the bottom of the pan and burn.
  10. When the egg is cooked, turn the flame off.
  11. Taste and check if the salt is sufficient. If not add enough salt and add in the crushed pepper. Give it a good mix.
  12. And yup - you are done :-)

This is a delicious dish - the perfect marriage between egg and spinach. Oh and that pepper and soy sauce goes so well with the spinach - yummmmm. And it's easy to prepare. You just need to be patient in cooking off the egg slowly and stirring constantly. So please give this a try. I'm sure you are going to love it :)

Sweet Potato Stir Fry (Mezhukkupuratti)

In Kerala, these stir fry dishes would be called Mezhukkupuratti . They are quick to make and are absolutely delicious. They go well with both rice and chapatti - a perfect side dish. And you can make mezhukkupuratti  with almost every vegetable :) So What Do We Need ? 1 big sweet potato. Clean it well and remove the skin completely. Then cut it into small thin rectangular pieces - almost like those thin French fries/ chips - just not as long - maybe half the length. Try to cut each piece out as evenly as possible. Also do  immerse the cut pieces in a bowl of water with around 1 tsp salt dissolved in it. Keep them in water till you are ready to cook them.
